Baked Shrimp Tacos are delicious and you should never have to cut them out of a healthy eating pattern. With a few small changes, you can transform a taco into a healthy comfort food.
Pair your tacos with a side of vegetables like cabbage or sauteed bell peppers and squash for a well balanced meal.

If you don’t like shrimp (or you’re allergic to it), swap the shrimp for any protein:

– Chicken
– Tofu
– Beans
– Eggs
– Lean beef
– Lean pork

Ingredients

  • 2 2 tomatoes, cored and chopped

  • 2 2 small onions, chopped fine

  • 1 1 jalapeno, stemmed, seeded and minced

  • 2 tbsp 2 no sugar-added ketchup

  • 1/2 tsp 1/2 minced garlic

  • 1 tsp 1 salt

  • 1/8 tsp 1/8 black pepper

  • 1 lbs 1 shrimp, peeled, deveined, tails removed

  • 5 tbsp 5 olive oil

  • 12 12 6-inch corn tortillas

  • 1/4 cup 1/4 shredded Mexican style mixed cheese

  • 1 bunch 1 cilantro for topping (optional)

  • 3 3 limes, cut into wedges

  • In a skillet, heat 3 tbps of olive oil over medium heat until rippling. Add tomato mixture and cook 10 mins or until tomatoes and onions are soft.
  • Mix in shrimp and cook 7 mins or until shrimp is pink. Remove from heat.
  • On a baking sheet, lay out tortillas in a single layer.
  • Brush both sides of the tortillas with olive oil.
  • Sprinkle a little cheese onto each tortilla, then add cooked shrimp mixture to center of tortilla.
  • Add more cheese to tortilla.
  • Bake tacos for about 10-15 mins or until tortilla edges are crispy.
  • Add cilantro to tacos if desired.
  • With a flat spatula, fold tacos in half.
