This sheet pan veggie bowl recipe will keep you fuller for longer with high protein, high fiber ingredients…and the best part is you only need 1 pan to make it (so super easy cleanup).

Make prep faster when you use pre-chopped and canned veggies (less work for you).

And modify the recipe if you want!
Need more protein? Add tofu, shrimp, chicken, lean beef or extra beans
Need to feel fuller? Use more avocado per bowl
Meal prep it? Store toppings separately and reheat just the rice and veg

Ingredients

  • 2 tbsp 2 olive oil

  • 1 cup 1 sweet corn kernels (not on cob)

  • 3 large 3 bell peppers, diced or julienned

  • 2 2 red onions, peeled and sliced into ⅛th sized pieces

  • 1 large 1 sweet potato, diced

  • 1 can 1 15-ounce can of low sodium, black beans, drained and rinsed

  • 3 cups 3 cooked white rice or rice of choice

  • 1 large 1 avocado, sliced

How to make

  • Roast Vegetables
  • Preheat oven to 350 degrees
  • On a baking sheet, arrange cut vegetables into a single layer.
  • Drizzle with olive oil. Turn the veggies to coat both sides with the oil.
  • Bake for 30-45 minutes or until “fork tender” (fork inserts into vegetable easily)
  • Assemble Bowls
  • In serving bowls, add 3/4 cup rice per bowl.
  • Layer 1/4 of each veggie type on top of rice
  • Top with 1/4 of the sliced avocado. Serve with lime (optional).

Equipment

  • Baking Sheet
  • Cutting board and knife
